Peach Jell-O Pie

1 1/4 cups apple juice
1/3 cup sugar
3 tablespoons cornstarch
1 package (4 serving size) Jell-O Brand Peach Gelatin
2 cups peeled, sliced ripe peaches
1 Honey Maid Graham Cracker Pie Crust


Mix the apple juice, sugar, and cornstarch in a saucepan and cook on medium heat for 2 minutes or until thickened, while constantly stirring.  Remove from heat.  Add gelatin and stir for 2 minutes or until completely dissolved.  Place sliced peaches in pie crust.  Pour the gelatin mixture over the peaches.  Refrigerate for 2 hours or until firm.  Makes 8 servings.
